Tore Gustafsson is the Executive Chef and joins Villa Copenhagen from Paté Paté, a much-respected institution in Copenhagen’s restaurant scene. The Swede has been in the business for 30 years and worked at restaurants in Stockholm and Malmö before moving to Denmark.


Villa Copenhagen is a grand dame hotel for the 21st century. Set in the former Central Post and Telegraph Head Office, which dates to 1912, the 390-room hotel will open its doors in the heart of the Danish capital in April 2020. Epicurean has designed the hotel’s food and beverage venues including Kontrast Brasserie, T37 Bar & Lounge, Public restaurant, Rug Bakery and the Playroom. The rooftop terrace leads onto a tempting sauna and gym space, also designed by Epicurean. Each venue has its own unique ambience, informed by its position within the hotel, the heritage features found in the rooms and purposes for use.  


Gustafsson is responsible for Villa Copenhagen’s sustainable food profile, maintaining a focus on ‘carbon-free’ dining. The food and beverage team create dishes with locally grown produce at each dining establishment, reducing meat consumption with great attention to food waste, and managing the hidden rooftop garden where bees pollinate and produce honey. Kontrast Brasserie will serve Southern European cuisine, with influences from North Africa.
